A culinary heritage as rich as its history
Over the centuries, Portugal has been ruled by many empires. From the Romans came wine and olives. From the Moorish came figs, almonds and citrus fruits, used to sublime flavours.
Later, at the zenith of the Portuguese empire, Vasco da Gama and other sailors sailed the Seven Seas, seeking wealth and adventure, and brought back plants, cereals and spices, to complete Portuguese's culinary heritage.
Among Chef Raul's favourite seasonings : the olive oil, thick and smooth, the laurel, to season the rice, fish and meat, the piri-piri to bring out the taste of grilled meat and sauces, and the cinnamon, to perfume cakes and pastries.
